Mr. Science has volunteered to serve as guest host of the Heck Of A Guy Blog.1 Mr. Science has many skills: he was a teacher extraordinaire until he became a professional retiree, he is an expert birder, he is an accomplished photographer who has sold his work to individuals other than his mother and who presented DrHGuy with a photo that is displayed even when Mr. Science isn’t visiting, and he married well – on his first attempt.

2. The Ziploc Omelette Buffet
This is an excellent breakfast recipe for family gatherings, whether they feature a scheduled breakfast get-together or a wake up when you want – have breakfast when you want morning. The best part is that no one has to wait for his or her special omelette. And, there’s no frying!
1. Each guest writes his or her name on a quart-size Ziploc freezer bag with permanent marker.
2. Crack 2 large or extra-large eggs (not more than 2) into each bag & shake the bag until the eggs are thoroughly mixed.
3. Provide a variety of omelette ingredients such as cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
4. Each guest adds ingredients of choice to his or her bag and shakes.
4a. Ha Ha. Very funny. Everybody’s a comedian. OK, Each guest adds ingredients of choice to his or her bag and shakes the bag.
5. Expel all of the air from the bag.
6. Make sure all the air is expelled from the bag. Remember, this is Mr. Science warning you. And, are you wearing your safety goggles?
7. When you’re certain all the air is expelled, zip the bag shut.
8. Place the bags into rolling, boiling water for exactly 13 minutes. A large pot can cook up to 6-8 omelettes together.
9. Open the bags and the omelette will roll out easily.

10. Be prepared for everyone to be amazed so that you can accept their accolades and well-deserved praise graciously. Bowing and mute acknowledgment of applause are optional. A speech is probably over the top, but, hey, it’s your family.
This is a nice dish to serve with fresh fruit and coffee cake. Everyone gets involved in the process and it’s a great conversation piece. If your family opts for the wake up when you want – have breakfast when you want morning, just prepare the omelette bags the night before and then drop the bags in boiling water whenever you wish. Thirteen minutes later, you’ve got yourself a dandy omelette.
The omelette in the photo contained tomatoes, ham, green onions, cheddar cheese and mushrooms.
